Ingredients

  • 2 lemons: 1 sliced into rounds, 1 sliced into quarters (to serve)
  • 4 (175g each) red snapper fillets, skin removed
  • 1 garlic clove, crushed
  • 4 bunches asparagus, trimmed
  • 2 Tbsp. olive oil

Directions

Step 1:   Preheat oven to 180°C. Cut foil into four large squares.

Step 2:  Place 1 fish fillet in centre of each square of foil. Top with crushed garlic, rounds of lemon and   drizzle with olive oil. Fold up foil to enclose filling and form a parcel. Place on a baking tray. Bake for 20 to 25 minutes or until fish is cooked through.

Step 3:  Meanwhile, add 1 Tbsp. of olive oil and   asparagus to a pan on medium heat and stir   frequently. Cook for 5 minutes or until tender.

Step 4:  Place asparagus on serving plates, top with fish and   drizzle with remaining sauce from parcel. Serve   with lemon wedge on the side.
