Foods like this can easily get you out of bed! Especially when they are loaded with protein. Extra beans, mushrooms and a toast? What a great breakfast idea!

500g / Potato (1-2 medium)

45ml / Avocado Oil or Oil of choice

35g / @natureswayoz natural protein powder

1-2 tsp / Salt (or to taste)

Preheat oven to 200 degrees Celcius, line a tray with baking paper and set aside.

Prepare a large bowl with COLD water. Grate potato finely and add to the bowl of COLD water. Using your hands, move the grated potato around in the water to help remove most of the starch. After a few minutes, drain the water from the potato.

Place a tea towel in a medium bowl and add the drained potato on top. Using the towel gather the potato and squeeze all of the excess liquid (you should be left with something that resembles the texture of shredded coconut).

Add the potato to a clean dry bowl along with the oil, protein powder and salt. Once everything is well combined, it should be sticky enough to form into hash browns of desired size (9-10). Place hash browns onto baking tray and bake in the oven for 15mins before flipping them over and baking for a further 10-15mins, or until golden.

Best served warm and can be stored in the fridge for up to 4 days.
