
PB+J Protein + Greens Cookies

Servings: 20-24 / Prep Time: 10mins / Total time: 40mins
INGREDIENTS:
20g / Chia seeds (mixed with 60ml of almond milk)
120g / Brown Rice Flour
60g / @natureswayoz Protein + Greens powder
60g / Granulated sweetener of choice
1tsp / Baking powder
200g / Peanut butter
150ml / Almond milk
¼ c / Jam of choice
DIRECTIONS
Preheat oven to 170 degrees Celsius and line a tray/s with baking paper.
In a small cup/bowl mix together the chia seeds and almond milk and heat in the microwave for 30 seconds. Stir then set aside to thicken and form a chia ‘egg’.
In a bowl combine the flour, protein + greens powder, granulated sweetener and baking powder.
In a separate bowl, mix together the peanut butter, almond milk and chia ‘egg’. Add the dry ingredients to the bowl of wet ingredients, and mix to form a soft dough.
Divide the mixture out into cookies of the desired size. Flatten and make a small indent on top to add ½ to 1 tsp of the jam to each one. Bake for 20-25mins, or until golden, and ENJOY!
Allow cooling before storing them in an airtight container in the fridge for up to 5 days!
