Choc Mint Recovery Slices

To all our chocolate mint fans… This recipe is a finger-lickin’ snack or delicious dessert to surprise your guests or your family. It is also a great post-workout recovery food as it has some delicious Nature’s Way Vanilla Protein + Magnesium powder!

INGREDIENTS
BASE
  • 150g / Oats
  • 30g / Cacao powder
  • 50g / Granulated sweetener
  • 50g / Peanut butter
  • 100ml / Almond milk
MINT FILLING
  • 1x400g can / Cannellini Beans or chickpeas, drained and rinsed
  • 100g / Dates, pitted (approx. 6)
  • 50ml / Almond milk
  • 60g / Nature’s Way Vanilla Protein + Magnesium powder
  • ½ tsp / Nature’s Way spirulina powder
  • 1 tsp / Natural peppermint flavouring extract
CHOCOLATE LAYER
  • 100g / Dairy-free chocolate
  • 20ml / almond milk
DIRECTIONS

Prepare a square cake tin by lining with baking paper and set aside. Add the oats, cacao powder and granulated sweetener to a food processor and pulse until slightly broken down. Add the remaining base ingredients and pulse again until a crumbly and sticky texture forms. Press base into the prepared baking tin and set aside.

Add the beans/chickpeas, dates, and almond milk into a food processor and blend until smooth. Add the protein powder, spirulina and mint flavouring and blend until a thick filling has formed. Spread mixture out on top of the base and set aside. In a small bowl, add the chocolate and almond milk and melt in the microwave in 20second intervals (mixing in between) until melted and smooth. Spread chocolate mixture out evenly over the filling. Place in the fridge to set for about 1hr before slicing into 12-16 pieces. Store in the fridge for up to 5 days.
