Acai+ Blueberry doughnuts
Who would think that some doughnuts are not only delicious but also healthy and enriched with antioxidants? These Acai doughnuts will surely surprise your taste buds!
- 250g / Coconut Yoghurt
- 85g / Peanut butter
- 125ml / Almond milk
- 1tsp / Apple cider vinegar
- 150g / Flour of choice (WM Spelt or Brown Rice flour work best)
- 60g / Nature’s way Vanilla protein + magnesium powder
- 50g / Granulated sweetener of choice
- 25g / Nature’s way Acai + Berries powder
- 1tsp / Baking powder
- ½ tsp / BiCarb soda
- 120g / Fresh or frozen blueberries
Preheat oven to 170 degrees Celsius and grease your doughnut baking tray.
In a large bowl combine the coconut yoghurt, peanut butter, almond milk, and apple cider vinegar and set aside. In a separate bowl mix together the flour, protein powder, sweetener, acai powder, baking powder and bicarb soda, ensuring there are no lumps. Add the bowl of dry ingredients to the large bowl with wet ingredients, and fold together until just combined. Add the blueberries and mix through the batter, being careful not to overmix.
Divide the mixture out into the prepared doughnut baking tray (8-12 doughnuts) and bake for 20mins, or until golden and a skewer comes out clean. Allow cooling before storing them in an airtight container in the fridge for up to 5 days!
