Ingredients:

  • 180g soba noodles
  • 150g snow peas
  • 1 bunch asparagus
  • 1 tbsp. rice wine vinegar
  • 1 1/2 tbsp. soy sauce
  • 1/2 tsp caster sugar
  • 1 tsp sesame oil
  • 500g green prawns, peeled
  • 4 pieces fresh ginger, peeled- and sliced
  • 2 garlic cloves, sliced
  • 2 tsp peanut oil
  • 3 spring onions, sliced

Directions

Step 1: Following the packet directions, cook the soba noodles. In the last minute of cooking, add the snow peas and sliced asparagus. Drain off water and set aside in a bowl.

Step 2: Place vinegar,  soy sauce, sugar and sesame oil in a bowl.

Step 3: Combine garlic, ginger, half of the soy sauce mixture and prawns in a bowl.

Step 4: Heat half of the peanut oil in a non-stick pan over medium to high hear. In 2 batches, cook the prawn mixture. Stir for 3 minutes or until the prawns are golden and cooked through.

Step 5: Add spring onion and the remaining soy sauce into the prawn mixture. Lightly toss the noodle mixture in the prawn mixture until combined.
