Ingredients:

  • 450g beef stir-fry strips
  • 100g snow peas, trimmed and diagonally sliced
  • 1 yellow pepper, cut into slices
  • 1 red onion, sliced into thin wedges
  • 2 tsp grated ginger
  • 1 Tbsp. sherry
  • 2 Tbsp. oyster sauce
  • 2 Tbsp. peanut oil
  • 1 Tbsp. salt-reduced soy sauce

Directions

Step 1 Place ginger, sherry, oyster sauce and soy sauce in a large bowl and mix to combine. Place beef strips in bowl and spoon marinate over beef to coat. Cover and refrigerate for 15 minutes.

Step 2 Heat half the olive oil in a wok or large frying pan. Drain the beef from the marinade. Cook beef over high heat for 3 minutes or until nearly cooked through. Remove and wipe pan clean with paper towel.

Step 3 Heat remaining oil in the wok over high heat. Add onion and cook for 4 minutes or until just tender. Return the meat to the wok, along with the asparagus and snow peas, and stir-fry for a further 2 minutes. Serve immediately with steamed rice.
