Cook until golden, and serve with a fresh garden salad
Golden Vegetable fritters
Preparation time: 20 mins
Calories: Approximately 350 calories per serve
- 2 tbsp. olive oil
- 1 can corn kernels, rinsed, drained
- 1 large red capsicum, diced
- 2 tbsp. parsley, diced
- 3 eggs, beaten
- 1/4 cup flour
- ground black pepper, to taste
- large green salad, to serve
Step 1: Place frypan over a medium heat and add 1 tbsp. olive oil. Add corn and capsicum to pan and cook for approx. 2 mins, or until softened.
Step 2: Transfer cooked corn and capsicum to a bowl and combine with parsley, eggs and flour. Season with pepper, to taste.
Step 3: Place frypan over a medium heat and add remaining olive oil. Add large spoonfuls of mixture to pan, in batches (to make 12 fritters total). Cook for 1–2 mins each side, until golden. Serve with a green salad.
