Ingredients:

  • 4 115g skinless salmon fillets
  • 2 cups fresh coconut water
  • 1 tsp. black peppercorns
  • 2 limes: 1 quartered, and 1 thinly sliced 
  • 400g green round beans, steamed

8 small baby potatoes, steamed

Directions:

Step 1  Boil potatoes in large pan for approximately 15 minutes or until just tender. Once cooked, drain water and set aside.

Step 2  Meanwhile, place Salmon into a frying pan over medium heat with coconut water, peppercorns and thinly sliced lime and bring to a gentle simmer.   Reduce heat to low and occasionally spoon    coconut water over the fish. Cook for 3-5 minutes   or until cooked to your liking.

Step 2  To serve, divide the green beans among plates. Top with the salmon and serve with baby potatoes, halved, and a wedge of lime.
