Peanut Butter and Chia Muesli Bars

This energy dense superfood muesli bar is a great after school snack for busy kids or a pre-race snack for ultra marathoners.  Make sure you portion out the serves and don’t scoff them all at once, or you might find yourself with enough energy to run across the Nullarbor. A superfood recipe the whole family can enjoy.

Peanut Butter and Chia Seed Bar Recipe


  • 1  cup oats
  • 1 cup puffed rice cereal
  • 1/2 tsp salt
  • 2 Tbsp. Nature’s Way Super Chia
  • 1/2 cup dried cranberries
  • 1/4 cup chocolate chips
  • 1/2 cup Peanut Butter
  • 1/2 cup agave (or honey / maple syrup)
  • 1/2 tsp vanilla extract


Mix first 4 ingredients in a bowl. In a separate bowl combine Peanut Butter, agave and vanilla. Heat PB mix in microwave for 30 seconds or until smooth easy to mix.

Combine wet & dry ingredients. Add cranberries and chocolate chips. Mix through.

Press into an 20cm x 20cm  glass pan lined with baking paper. Refrigerate for a minimum of 1 hour, but longer is better

Cut into bars. Enjoy!

Tip: Spray measuring cup with non-stick before adding peanut butter and it slips right out!
